The event is part of a festival that began back in 1997 at the Biscayne Bay Campus on the Florida International University. Known then as the Florida Extravaganza, it was shifted to the South Beach in 2001 and renamed as such. In 2001, it attracted over seven thousand guests and a year later, this figure rose to ten thousand guests and national media coverage. In 2004, the number of guests had risen to twenty thousand, a figure that more than doubled to fifty thousand in 2009.

Nobuu Matsuhisa is a celebrity chef and restaurant owner famous for his fusion of Japanese cuisine with Peruvian cuisine. Martha Stewart is an author, owner of a business empire and a TV personality regarded as one of the most popular culinary celebrities. Christophe Navarre is the chief executive office of Moet Hennessy, one of the world’s finest wine brands. Nobuyuki Matsuhisa, celebrity chef extraordinaire and restaurateur, was born in Saitama Japan. At a young age, his father died in a car accident and he, alongwith two brothers, were raised by his mother. After high school, he started work at Matsue Sushi, a restaurant in Tokyo’s Shinjuku district. It was here that he caught the attention of a regular customer and entrepreneur who asked him to open a restaurant in Lima, Peru. In Peru, he found himself improvising due to a lack of ingredients, creating a unique style of cuisine that mixed South American cuisine with Japanese. He then moved to the US where he started his own restaurant in Beverly Hills which became a hotspot for Hollywood celebrities such as Robert De Niro, who would invite him to start a restaurant in Tribeca, New York.
Together with Robert De Niro, Nobu Matsuhisa started a chain of restaurants named NOBU in various cities of the world, such as Milan, Greece, London, Tokyo, Dallas, Moscow, Dubai, Budapest and Honolulu.
